Description: Delicious soup with broccoli, carrots, Velveeta

Serving Size: 6-8

  • 1 cup water
  • 1/4 cup chicken broth
  • 1 10oz pkg frozen broccoli
  • 1 med carrot, finely grated (or chop some canned carrots)
  • 1 Tbs butter or margarine
  • 3 Tbs all-purpose flour
  • 2 cups milk
  • 1 lb Velveeta, cubed
  • 1 can cream of chicken soup
  • 1 Tbs chopped onion
  • 1 Tbs Worcestershire sauce
  • Salt and pepper to taste
  • In medium pan, heat water and chicken broth to boiling, then add broccoli and carrot. Cook according to package direction for broccoli. Remove from heat but do not drain.
  • In larger cooking pot, melt butter, slowly adding flour, stirring constantly. Add milk while continuing to stir. Add cheese, cream of chicken soup, onion, Worcestershire sauce, salt, and pepper.
  • Add broccoli/carrot mixture and cook over low to medium heat until desired thickness.
