Description: This is super easy (minimal chopping), and then you just dump everything else in from a can. It is very yummy. If you are following Weight Watchers, it is 1 point per serving.

Ingredients:
  • 1 C peeled, seeded, and diced cucumber (1 medium)
  • 1 C finely diced red onion (1 medium)
  • 2 cans diced, undrained tomatoes
  • 2 cans chopped green chiles, undrained
  • 1/3 cup fresh lime juice (5 limes)
  • 1 medium diced avocado
  • ˝ C finely chopped fresh cilantro
  • 2 C chicken broth
Steps:
  • Combine all ingredients, chill for at least 2 hours.
