Description: A super easy crock pot recipe. I created it because my husband hates mushrooms and I wanted a veggie in there somewhere.

You can use "healthy request" soup and low fat sour cream for a lower fat option. It tastes pretty much the same.

Time: ~8 hours

Difficulty: Easy

Ingredients:
  • 1 1/4 Lb stew beef, in chunks
  • 1 large green pepper
  • 1 large onion
  • 1 can cream of celery soup (condensed)
  • 8 oz sour cream
  • 3/4 Lb egg noodles
Steps:
  • Add beef to the bottom of the crock pot
  • Cut pepper and onion into chunks, add on top of beef
  • Pour cream of celery soup on top of everything.
  • Cover crock pot and turn on LOW
  • Stir every couple of hours
  • Cook on low all day (about 8 hours)
  • Boil noodles according to directions
  • Approximately 10 minutes before serving, add in sour cream and stir. Cook 10 minutes.
  • Add salt and pepper to taste
  • Serve over noodles.
