    Default Brown Sugar Meatloaf

    Order nail wraps from a Jamberry Independent Consultant
    Description: Very easy tasty meatloaf with limited ingredients & work. DH and DD LOVE it...

    Serving Size: 8

    Time: 20 minutes prep, 1 hour cook

    Preparation: Preheat oven to 350 degrees F (175 degrees C).

    Difficulty: Easy

    Ingredients:
    • 1/2 cup packed brown sugar
    • 1/2 cup ketchup
    • 1 1/2 pounds lean ground beef
    • 3/4 cup milk
    • 2 eggs
    • 1 1/2 teaspoons salt
    • 1/4 teaspoon ground black pepper
    • 1 small onion, chopped
    • 1/4 teaspoon ground ginger
    • 3/4 cup finely crushed saltine cracker crumbs
    Steps:
    • Lightly grease a 5x9 inch loaf pan. Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
    • In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf.
    • Place loaf on top of the ketchup.
    • Bake in preheated oven for 1 hour.
    • Let stand for 10 minutes before slicing and serving- remember to KEEP the sauce to serve over the slices- Delicious!

    Additional Tips:

    When I don't have an onion on hand I've used just a dash or two of onion powder for flavor. I've left out the ginger before too- and it's still good, but I do suggest using it if you have it.

    I also go a little lighter on the salt since the saltines are already pretty salty. This is a great way to use up your stale saltines too

    I usually go a little heavier on the sugar and ketchup because everyone LOVES the sauce. You can always mix up additional sauce for leftovers though- just do a 50-50 mix in a small pyrex dish and heat through in microwave.

    This is a really good meatloaf. I liked the texture of the meatloaf itself. It was a bit sweet for my taste though. I would use less sugar, personally. I would have liked it better with a bit more tang. Both my kids LOVED it.

    I used onion powder (1 tsp) since DD has issues with onions that she can see. And whole wheat saltines. About 3/4 sleeve made the right amount of crumbs. DD LOVED smashing them with the rolling pin, so this is a good way to get the kids involved in helping to make dinner. I am always on the lookout for recipes that do that.

    My DD asked where I got the recipe from. I told her one of my internet friends. She said, "well Mom, she makes the BEST meatloaf ever!" So, I guess that would be a big from us!

    This is fantastic!!

    I had to cook mine longer...but could have been a fluke...it was wonderful...dh loved it too.

    I'd also double the goo for saucing on the plate!

    This is almost exactly the meatloaf I grew up with, except we put the ketchup and brown sugar on the top to bake.

    Dee-lish!!! People always rave over it!

    We tried this last night, and it was super yummy. I am not a meatloaf fan, but I went back for seconds with this one.

    Mine took longer to cook, too (like closer to an hour and a half), so I might bump the oven temp up to 400 the next time and see how it goes. I doubled the sauce, so there was plenty to go around.

    We make this all the time. It's the only meatloaf DH will eat. We use ground turkey breast most of the time and it's great.
