    Default Spinach Bacon Quiche

    Order nail wraps from a Jamberry Independent Consultant
    Description: A wonderful mix of spinach, bacon and cheese. A great brunch dish.

    Serving Size: 8

    Preparation: Preheat oven to 400.

    Difficulty: Medium

    Ingredients:
    • 4 eggs
    • 2 cups milk
    • 1 1/4 cups shredded Cheddar cheese, divided
    • 1/4 cup finely chopped onion
    • 4 bacon strips, cooked and crumbled
    • 1/2 teaspoon salt
    • 1/2 teaspoon dry mustard
    • 1/4 teaspoon paprika
    • 1 (10 ounce) package frozen chopped spinach, cooked and drained
    • 1 (9 inch) unbaked pastry shell
    Steps:
    • In a large bowl, beat eggs; whisk in milk, 1 cup cheese, onion, bacon, salt, mustard and paprika.
    • Add spinach.
    • Pour into pie shell.
    • Sprinkle with the remaining cheese.
    • Bake at 400 degrees F for 40 minutes or until a knife inserted halfway between the center and the edge comes out clean.

    The pie shell will be quite full. I found it better to put it on a cookie sheet.

    I tried this last night, and it was delicious! I think I will reduce the milk a bit next time, though, as it was a bit liquidy (nice word, huh?) even after about 45-50 mins in the oven. I also think I will either half the recipe or do two the next time because it really did overflow. I took your advice withe the cookie sheet, but it was still a pretty big mess.

    So, so yummy. I will definitely be adding this to my regular rotation. Dh loved it, too.

    I'm glad It does need some tweaking. I'm still working on it. I used a deep dish and it was less full but it took FOREVER to cook.

    The first time I made it, I didn't fill it completely and most of what was left was milk/liquid. I agree - next time, I'll just decrease the milk.

    I'm glad you liked it. It was a big hit here.

    This was very good!!! I only used 1 cup of milk and it did not overflow at all. Still took about 55 minutes to bake, but that's not any different from other quiches I have made.

    I made this last week, adding in a sauteed red pepper and cutting the milk to 1.5 cups per PP, and it was AMAZING!!!!

    I made it again tonight, with peppers, onions, mushrooms, and bacon, and used 2 eggs and 2 eggs-worth of Eggbeaters, and I have to say it was more of a bust. Too soggy and the texture was off. I'm guessing it was a) the Eggbeaters, and b) the remaining moisture in the 'shrooms.

    SO - word of warning - Eggbeaters may be great for omelettes, but not for quiche!!!

    This is great! Thanks for sharing, Cherie. I have to make sure I really dry the spinach well, or the pie crust gets soggy.
