    Default Artichoke Chicken

    Order nail wraps from a Jamberry Independent Consultant
    Description: Flavorful and easy chicken recipe. Great quick meal for entertaining!

    Serving Size: 4

    Preparation: Preheat oven to 375 degrees F (190 degrees C).

    Ingredients:
    • 1 (15 ounce) can artichoke hearts, drained and chopped
    • 3/4 cup grated Parmesan cheese
    • 3/4 cup mayonnaise
    • 1 pinch garlic powder
    • 4 skinless, boneless chicken breast halves
    Steps:
    • In a medium bowl, mix together the artichoke hearts, Parmesan cheese, mayonnaise, and garlic pepper. Place chicken in a greased baking dish, and cover evenly with artichoke mixture.
    • Bake, uncovered, for 30 minutes in the preheated oven, or until chicken is no longer pink in the center and juices run clear.

    I often use light mayonnaise and it turns out equally as fantastic.

    Tastes great served with steamed jasmine rice.

    For extra flavor if desired can use marinated artichoke hearts or add crumbled cooked bacon.

    This recipe was really easy to make but it didn't have a lot of flavor. I made it according to the directions and added a bit more garlic powder. In the end, the chicken was extremely tender but did not have much flavor. The sauce was fabulous but still needed an extra kick. If I made it again, I would use chicken finger size pieces so the ratio of chicken to sauce would be smaller and I would add crumbled bacon.

    The recipe does call for a pinch of garlic powder -- but like another reviewer said, it does need more. I usually put in 1/2 to 1 teaspoon of garlic powder when I make it.

    Freshly grated parmesan cheese also makes a huge difference when preparing this recipe.

    Fixed this for dinner tonight and it got from DH and I

    Victoria wasn't as sure... but she did eat some with the aid of a little ketchup Oh well- at least she got a little veggie in her

    I did use a clove of minced garlic instead of garlic powder... and I did cook bacon & crumbled on top. DH and I agreed that it would have still been good without the bacon- but the bacon flavor combo is what really put it over the top to be truly excellent

    On a final note- it smells SO yummy while in the oven!!!

    Made it tonight Used fresh garlic but forgot the bacon And in the middle of it Chase said, "You know what? This would be really good with bacon." And I went Bacon!

    We ate the leftovers tonight Just as good reheated in the oven (with fresh-made bacon crumbled on top )
