    Default Roasted Chicken Caprese

    Order nail wraps from a Jamberry Independent Consultant
    Description: Delicious Italian chicken dish

    Serving Size: 4

    Preparation: Place chicken in a 1-gallon zip-lock bag. Prepare lemon vinaigrette marinade by whisking together lemon juice, garlic, 3/4 teaspoon salt, and 1/2 teaspoon pepper in a small bowl. Slowly whisk in oil to emulsify. Add lemon vinaigrette to chicken, seal the bag and marinate in refrigerator for at least 30 minutes.

    Difficulty: Medium

    Ingredients:
    • 4 boneless, skinless chicken breast halves
    • 2 tablespoons freshly squeezed lemon juice
    • 1 clove garlic, minced
    • 1 3/4 teaspoons salt, divided
    • 1 teaspoon pepper, divided
    • 1/2 cup olive oil, divided
    • 6 medium Roma tomatoes
    • 1 teaspoon sugar
    • 8 ounces mozzarella cheese, shredded or cut in 1/4-inch pieces
    • 1/4 cup coarsely chopped fresh basil leaves
    Steps:
    • Preheat oven to 375 degrees F.
    • Cut each tomato into quarters lengthwise. Place in a medium bowl and toss gently with sugar, remaining teaspoon salt, and 1/4 cup olive oil.
    • Spoon tomato mixture into a rimmed cookie sheet so that tomato pieces don't touch.
    • Roast for 30 minutes.
    • Spoon tomatoes and all accumulated juices into a small bowl.
    • Add cheese, basil leaves, and pepper, tossing gently.
    • Let sit at room temperature while chicken cooks.
    • Reduce oven temperature to 350 degrees F.
    • Remove chicken and discard marinade.
    • Place chicken on same cookie sheet used to roast tomatoes.
    • Roast for about 30 minutes, turning once half-way through, or until fully cooked through.
    • To serve, place 1 chicken breast half on each heated dinner plate. Spoon 1/4 of tomato mixture over top.

    This is absolutely delicious! It tastes like something you'd have at an Italian restaurant. The roasted broccoli is great, too!

    LOL! I just had to say...when I was skimming over the list of new topics, and I first saw this, I guess my eyes passed over it too quickly because at first I thought the title of the recipe was"

    "Roasted Chicken Corpse"

    and I thought "well, yeah, it would have to be, wouldn't it?"

    Then, I read it more carefully. Oops!

    I made this last night and it was SO GOOD! Even the kids ate it which makes it a huge winner
    I didn't need as many tomatoes as called for - DH isn't a big tomato fan and the romas I had looked pretty big so I just used 2 and it seemed like plenty. I probably only had 5-6 oz of cheese at best and it was plenty too (which is strange for me to say since I LOVE tomatoes and cheese!!). The tomato topping is delicious - don't skip it!
    I also tripled the garlic (since we LOVE garlic)

    I served with roasted asparagus and homemade rolls... a hit!
