    Default Use-It-Or-Lose-It Chicken Tagine

    Order nail wraps from a Jamberry Independent Consultant
    Description: Tasty chicken tagine with a Mediterranean flair

    Serving Size: 4

    Ingredients:
    • 1 minced onion
    • 1 lb chicken
    • 1 28-oz can diced tomatoes
    • 1 can cannelini beans (white navy beans)
    • Several carrots sliced thickly
    • Fresh spinach (I literally had about 15 leaves but I wanted to use them up. I'd use a half or full bunch)
    • 1 lemon sliced
    • 1-2 T dried rosemary
    • S&P to taste
    Steps:
    • Sautee the onion in EVOO
    • Brown some chicken (I used chests but I think it would be better with thighs - bones and skin add a ton of flavor)
    • Add the tomatoes and lemons, and simmer for 20 minutes.
    • Add the beans and simmer another 10 minutes.
    • Add the spinach just before serving, stir long enough to wilt it thoroughly.
    • 6. Serve over couscous or brown rice. Nummy! It's way better the next day, so consider making it without the beans or spinach, then adding them the next night before you eat it.

    You can also turn this into a Moroccan meal by replacing the rosemary with:

    1 teaspoon ground cumin
    1/2 teaspoon each: ground allspice, ground ginger, and turmeric
    1/4 teaspoon each: cinnamon, salt and cayenne pepper
