Ingredients:
  • 1/3 cup creamy peanut butter
  • 1/3 cup water
  • 2 tsp low-sodium soy sauce (I use braggs)
  • 2 TBSP honey
  • 1/4 tsp ground ginger
  • 2 tsp chopped parsley
  • 6 cups cooked whole grain rotelli (i just use whatever pasta i have on hand)
  • 3/4 cup steamed broccoli (i use more)
  • 1/3 cup shredded carrots (I dice carrots and steam them with the broccoli
Steps:
  • Over low heat cook the peanut butter, water, soy sauce, honey, ginger and parsley for 5-10 minutes
  • Toss with the pasta and veggies.
