    Default Apple Crisp Muffins

    Order nail wraps from a Jamberry Independent Consultant
    Description: Tasty muffins that just melt in your mouth. Tried this recipe at a fall picnic and it's become a family favorite around here.

    Serving Size: 24 muffins

    Time: 40 minutes

    Preparation: Preheat the oven to 350 degrees.

    Difficulty: Easy

    Ingredients:
    • 3 Cups flour
    • 3 cups peeled diced apples
    • 2 cups sugar
    • 1 teaspoon salt
    • 1 teaspoon baking soda
    • 1 teaspoon ground cinnamon
    • 1 cups vegetable oil
    • 2 eggs, lightly beaten
    • cup chopped pecans
    • 1 teaspoon vanilla
    Steps:
    • Spray two 12-cup muffin tins with vegetable oil spray.
    • In a large bowl, combine the flour, apples, sugar, salt, baking soda and cinnamon.
    • Stir in the oil, eggs, pecans and vanilla.
    • Fill the muffin cups to the top. Bake for 30 minutes.
    • Cool on a wire rack for five minutes before removing from the pan.

    You can make a streusel topping of butter, cinnamon and sugar mixed together and put on top and it really tastes awesome!

    OMG, YUM! Is all I can say!
    I made crumbs...but melted the butter...then I knew it was wrong. but thought I'd try it on one set of muffins! I used my self-cleaning feature for the first time!!
    The ones I used non melted butter in the crumbs
