Description: Yummy muffins that I use for lunches for the kids.

Preparation: Preheat oven to 375 degrees.

  • 2 1/4 cups all purpose flour (I use whole wheat flour)
  • 3/4 cup sugar
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 2/3 cup plain yogurt (i just use whatever i have in the fridge)
  • 4 TBSP melted butter
  • 1 large egg
  • 2 1/2 cups shredded carrots (i usually add zuch as well)
  • 1/4 flax seeds
  • Mix flour, sugar, cinnamon, baking soda and salt
  • In another bowl combine yogurt, butter and egg.
  • Add the wet ingredients to the flour mixture and stir just to blend.
  • Stir in the carrots and flax seeds.
  • Spoon the mixture into a lined muffin pan and bake for 20 minutes OR you can freeze the batch for baking later.
