Description: Hide your children's veggies in this delicious version of a simple spaghetti bake.

Ingredients:
  • 8 oz. uncooked spaghetti
  • 1 (28 oz) jar spaghetti sauce
  • 1 1/2 c. sliced zucchini (1/2 in. pieces)
  • 1 c. sliced celery
  • 1 c. thinly sliced carrots
  • 1 med. onion, chopped
  • 1 tbsp. olive oil
  • 2 c. cottage cheese
  • 2 c. shredded mozzarella
  • 2 tbsp. grated Parmesan cheese
Steps:
  • Cook spaghetti according to package directions; drain and add 1 1/2 c. spaghetti sauce. Set aside.
  • In a large nonstick skillet, saute the zucchini, celery, carrots, and onion in oil until tender.
  • Spread 1/2 c. spaghetti sauce in a 13 X 9 baking dish coated with nonstick cooking spray.
  • Layer with half each of the spaghetti mixture, cottage cheese, vegetables and mozzarella cheese.
  • Repeat layers.
  • Cover with remaining sauce and sprinkle with Parmesan cheese.
  • Cover and bake for 30 min.
  • Uncover and bake for 10-15 min. or until bubbly.
