Description: This salad is great for potlucks or outdoor entertaining.

Serving Size: Serves 8-10, side dish

Time: 30 minutes (if that)

Difficulty: Easy

Ingredients:
  • 1 cup rice
  • 1 can black beans, drained and rinsed well
  • 1 can kernel corn
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1/2 cup fresh cilantro, chopped
  • Juice of 1 lemon
  • Olive oil (about 1/3 cup)
  • Salt and Pepper to taste
Steps:
  • Cook rice according to package directions.
  • Rinse in cold water.
  • Mix together rice, beans, corn, red and green pepper, and cilantro.
  • Stir in lemon juice and enough olive oil to moisten.
  • Season with salt and pepper, chill and serve!
  • Note: Chopped jalepeno, hot sauce and/or a dash of cayenne will kick this dish up a notch!
