Description: Yummy chicken enchiladas with a lot of cheese using a pumpkin sauce.

Preparation: The chicken should be prebaked/roasted.

Ingredients:
  • 1)1/2 a roasted chicken skin removed or 2-3 large roasted chicken breasts
  • 2)1 bunch of green onions/scallions
  • 3) Coarse salt and ground pepper
  • 4) 1 15oz can of pumpkin
  • 5) 4 peeled garlic cloves
  • 6) 1 jalapeno chili or use 1 can of green chilis if you want the sauce milder
  • 7) 1 tsp chili powder
  • 8) corn tortillas
  • 9) grated white and or yellow cheddar cheese
  • 10) 2 1/2 cups water
Steps:
  • 1) preheat oven to 425
  • 2) in a medium bowl combine the chicken, onions, salt and pepper
  • 3) in a blender, place the pumpkin, garlic, jalapeno and/or green chiles, 2 1/2 cups of water, 2 tsp salt and 1/4 tsp pepper.
  • 4) blend until smooth
  • 5) layer ingredients: sauce, tortillas, cheese and chicken, tortillas, sauce, cheese and chicken, tortillas, sauce and finally the remainder of the cheese. (you could roll the chicken in the tortillas and cover with sauce and cheese instead)
  • 6) Bake 25-30 minutes.
