Chicken and Dumplings

Description: A yummy homemade chicken and dumpling recipe that my kids absolutely love! You can pare down the recipe or freeze half of the soup part for later use. Next time I am going to take half out of pot before I add the dumplings and freeze it to make another quick meal later.
Ingredients: - Bone-in chicken breasts (I use 3-4 pounds)
- 3-4 stalks of celery
- 1 - 1 1/2 pounds of carrots
- one medium white onion
- pasta (if you want to add noodles to the kids' bowls)
- 1 quart of chicken broth
- 6-8 cups of water with a boullion cube or some other chicken broth powder/flavoring (I used 6 tsp of mckay's chicken broth)
- Salt if you use boullion
- Dumplings (i was out of time and just used the reduced fat bisquick recipe X 4)
Steps: - Put the broth, water, chicken broth powder or boullion, chicken breasts and salt (if needed) in the stock pot and bring to a boil with the lid on.
- Boil about 30-45 minutes
- Remove the chicken from the pot. Pull the meat away from the skin and bone.
- Place the chicken meat back in the pot.
- Add the diced celery, onion and carrots.
- Simmer with the lid on until the vegetables are done (you can simmer much longer if you wish). I simmmered mine for about 2 hours.
- Add the dumplings and cover the pot. Wait 10-15 minutes before removing the lid again and the dumplings should be done.
- I cook up a small pot of pasta and put some in the bottom of each kids' bowl to make the meal more fun for them.
