Description: I love, love, love cake batter ice cream...but I can never find a light version of it, and I am trying to watch what I eat. I found a regular recipe for cake batter ice cream, which I also posted, but this is my own "tweaked" version. It has come out delicious, and even my light version has become a family (and neighborhood) favorite!!

Serving Size: 8

Time: 5 min to prepare/ 30 min to freeze

Preparation: Combine all of the ingredients except the sprinkles. Pour into the ice cream maker and turn on. Wait about 25 minutes, then add sprinkles for the last 5 minutes.

Difficulty: Very Easy

  • 1.5 cups of 1% milk
  • 1.5 cups of fat free half and half
  • 1/2 C sugar
  • 1/4 C Splenda
  • 1 tsp vanilla
  • 2/3 cup of your favorite cake mix
  • Optional: Sprinkles
  • Enjoy!
