    Default broccoli bacon salad

    Order nail wraps from a Jamberry Independent Consultant
    Description: Mixture of raw broccoli, bacon, and cheddar cheese in a tangy dressing

    Serving Size: 12

    Time: 20 min

    Difficulty: Easy

    Ingredients:
    • 8 slices bacon
    • 2 heads fresh broccoli, chopped
    • 1 1/2 cups sharp Cheddar cheese, shredded
    • 1/2 large red onion, chopped
    • 1/4 cup red wine vinegar
    • 1/8 cup white sugar
    • 2 teaspoons ground black pepper
    • 1 teaspoon salt
    • 2/3 cup mayonnaise
    • 1 teaspoon fresh lemon juice
    Steps:
    • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and crumble.
    • In a large bowl, combine broccoli, cheese, bacon and onion.
    • Prepare the dressing in a small bowl by whisking together the red wine vinegar, sugar, pepper, salt, mayonnaise and lemon juice.
    • Combine dressing with salad. Cover, and refrigerate until ready to serve.

    I love this salad! It is also really yummy if you use half broccoli, half cauliflower!

    Cherie - does the broccoli soften up at all as it sits overnight or does it stay super crisp? And if it stays crisp, do you think it'd be ok to steam the broccoli first? (We're not fans of raw broccoli but otherwise it sounds fabulous!)

    Not really. It stays pretty crunchy.

    Hmmm...steamed might work, I've never done it. I'd make sure to drain and dry it very well though.

    I suspect the cooked broccoli would get smelly overnight -you know that cabbage-y smell it can get?
