    Default Salmon Curry

    Order nail wraps from a Jamberry Independent Consultant
    Description: A quick and easy meal. Our "emergency" meal since most ingredients can be kept on-hand in the cupboard (and its flexible)*. I'm not a huge fan of tinned fish, but canned salmon totally works with this. Its also pretty healthy & low-fat

    Serving Size: serves 4+

    Time: 30 minutes

    Preparation: *You could also sub cooked chicken for the fish if you want; sub. regular milk, cream, or coconut milk for the evaporated milk; mess around with the spices a bit; sub. sweet potato for regular potato, green beans for peas, etc.

    Difficulty: Easy

    • olive oil (couple Tblsp, for saute)
    • 1 can (12+oz) Salmon (we use the 'Double "Q"' brand)
    • 1 can (14.5oz) diced tomatoes
    • 1 can (5oz) evaporated milk (low-fat OK)
    • 1-1.5 Tblsp Curry powder
    • 1/4 tsp each of:ground corriander, salt, sugar, cinnamon
    • 1 med. potato, cut into small chunks
    • 1 cup fresh or frozen peas
    • 1 small to med. onion, cut in half and into thin strips.
    • Serve with:
    • cooked rice
    • plain yogurt (optional)
    • Heat olive oil in large skillet
    • Saute onion in oil until soft.
    • Add tomato, milk, and spices;stir and bring to bubbling.
    • Add potato. Cook until potato is soft (~15 min)
    • Add frozen (or fresh) peas; cook ~5min.
    • Add salmon; Stir and cook until heated through (~ 5 min or so).
    • Serve over rice and top with plain yogurt, if desired.
