Description: This is a rich and hearty dinner, right out of the Weight Watchers cookbook. You get to do it all in the microwave, which makes it even better. It tastes like it should be so bad for you, but it is not!! If you are keeping track, it is 4 points per serving.

Preparation: Gather all ingredients and a 9x9 or 11x7 baking dish.

Difficulty: Very Easy

Ingredients:
  • 3/4 C Chopped Onion
  • 2-3 cloves of garlic, pressed
  • 2 tsp light butter
  • 4 cups of veggie or chicken broth
  • 1 C dry Arborio rice
  • 1/2 C dry white wine
  • 1 pint of grape tomatoes, halved
  • 1/4 C chopped fresh basil
  • 1/2 tsp salt
  • 1/4 cup diced fresh mozzarella
Steps:
  • Spray baking dish with cooking spray. Combine onion, garlic, and butter in the dish. Microwave on high (uncovered) for 2 minutes. Set aside.
  • Microwave broth in a glass bowl for 4 minutes. Stir rice and hot broth into onion mixture; microwave (uncovered) for 10 minutes. Stir in wine and microwave for another 10 minutes or until liquid is almost absorbed. Stir in tomatoes, basil, and salt. Gently fold in cheese.
  • If you are making this ahead of time, the tomatoes should be the last thing you add...You can make the whole recipe ahead of time...reheat it later...and add the tomatoes after reheating.
