    Default Cheesy Ham and Potatoes

    Order nail wraps from a Jamberry Independent Consultant
    Description: Yummy and kid-friendly. Excellent to make ahead and
    freeze.

    Difficulty: Easy

    Ingredients:
    • 1 24-ounce bag frozen
    • shredded hash browns
    • 1/2 cup minced onion
    • 2 10.75 (or so) ounce
    • cans cream of celery
    • soup
    • 1 1/2 cups shredded
    • Monterey Jack cheese
    • 1 8-ounce package of
    • creme cheese
    • 1 1/2 cups cubed ham
    • 1/4 tsp. pepper
    Steps:
    • Soften creme cheese and cream together with soup. Stir
    • in onions, ham, Monterey Jack cheese, and pepper. Break
    • hash browns apart, and gently stir into cheese mixture.
    • Place in freezer bag, label, and freeze.
    • To serve: Thaw. Place in greased baking dish. Bake
    • covered for 1 hour at 350*. Uncover and top with
    • shredded cheddar cheese. Return to oven until cheese is
    • melted.
    • -OR-
    • Can be cooked immediately, if you don't want to freeze.

    I made this for dinner last night and it was YUMMY!!! DS ate thirds!

    I messed up and used Southern-style hashbrowns, so it could have stood to be baked a little longer. I also used reduced fat soup, reduced fat cream cheese and 2% sharp cheddar cheese. It seems to have worked out well.

    I mixed it up in the morning and baked it in the evening. But, I can see how this would be good as a freezer meal.
