    Default Raisin Bran Muffins

    Order nail wraps from a Jamberry Independent Consultant
    Description: Easy to make; I like to keep a dozen or so out and freeze the rest to have on hand later.

    Serving Size: approx. 4.5 dozen muffins

    Preparation: Preheat oven to 400 deg

    Difficulty: Easy

    Ingredients:
    • 2.5 c. sugar
    • 4 beaten eggs
    • 5 c. flour
    • 1 c. oil
    • 1 qt. buttermilk
    • 5 t. soda
    • 2 t. salt
    • 2.5 t. cinnamon
    • 1 (15 oz) box Raisin Bran cereal (approx 7-8 cups cereal)
    Steps:
    • Mix until just moistened; bake at 400 degrees for 15-20 minutes. Keeps for weeks in refrigerator, so you may bake only as many as you need each time.

    I find vegetable oil works best with this recipe; the muffins become a nice golden brown color and seem to taste a bit more "rich" than with other types of oils. Also, I've been experimenting with using whole wheat flour, last time I used 1/2 white and 1/2 wheat and they were delicious!! ( I may have even liked them better this way...) Next time I'll probably try using even a bit more whole wheat.
