    Default Jerk Chicken Salad

    Order nail wraps from a Jamberry Independent Consultant
    Description: Yummy chicken salad flavored with a Jamaican Jerk Rub and served over rotini or lettuce

    Serving Size: 6

    Time: 30 minutes

    Preparation: For pasta, bring water to a boil; cook pasta to package directions.*
    Drain, rinse under cold water, toss with oil and set aside.
    Cook bacon and drain off grease; crumble.
    For dressing, zest one lime. Juice that lime and one more. Add zest, juice, mayo and pineapple preserves and mix well.

    Difficulty: easy

    Ingredients:
    • PASTA:
    • 16 oz rotini
    • 2 TBSP olive oil
    • DRESSING & SALAD:
    • 2 limes
    • 1/3 cup reduced-fat mayo
    • 1 TBSP pineapple preserves
    • 1 TBSP olive oil
    • 1 TBSP Jamaican Jerk Rub
    • 1 pound chicken tenders
    • 1 can (20oz) pineapple chunks or tidbits, drained
    • 1 can (15oz) black beans, drained
    • 1 red bell pepper
    • 6 slices bacon
    • 3 green onions (white and light green parts only)
    Steps:
    • For salad, whisk together oil and Jamaican Jerk Rub (there are a few different brands on the market) and then add chicken tenders and toss them to coat. Set aside.
    • Heat grill pan over medium heat 5 minutes. Add chicken; cook 5 minutes per side, turning once. Remove from pan.
    • Add pineapple chunks to same pan. Cook 2 minutes, turning once; remove from pan.
    • Cut chicken into bite-sized pieces.
    • Thinly slice bell pepper and green onion.
    • To serve, toss pasta with chicken, pineapple, beans, bell pepper, bacon, and green onions; drizzle with dressing and toss gently.
    • *If you prefer, you can skip the pasta and serve over lettuce. It's great either way!
