Description: Great way to use up leftover cooked chicken.

Serving Size: Yields 4 servings

Time: 30 minutes

Preparation: Preheat oven to 350
Cook chicken and broccoli spears if needed.

Difficulty: Easy

  • 3 tablespoons butter
  • 1/4 cup chopped onions
  • 3 tablespoons flour
  • 1 1/2 cups milk
  • 1 cup cooked chicken (chopped)
  • Broccoli spears (cooked) *I steam mine in the microwave
  • Shredded cheddar cheese
  • Melt butter in saucepan.
  • Saute chopped onions.
  • Stir in flour
  • Add milk.
  • Cook and stir until it thickens to form sauce.
  • Add chicken to mixture
  • Pour sauce over cooked broccoli spears in pie plate.
  • Sprinkle cheddar cheese liberally on top.
  • Bake at 350 for approximately 20 minutes.
  • Serve with potato chips (I don't know why- but my mom always did and it compliments the taste!!)
