    Default Crockpot Mexican Pork (CrockPot) (LowFat)

    Order nail wraps from a Jamberry Independent Consultant
    Description: This is a spicy, Mexican pork dish that is really delicious, but only 6 points on Weight Watchers. You can skip the cheese if you want to make it healthier. I forgot it one time and no one missed it!

    Time: 6-8 hours on low

    Difficulty: Easy

    Ingredients:
    • 1 pound pork boneless loin roast - cut into 1" pieces
    • 1 20 oz jar salsa
    • 1 4oz can chopped green chiles -- drained
    • 1 15oz can black beans -- rinsed and drained
    • 1 cup shredded Monterey jack cheese -- if desired
    Steps:
    • Mix pork, salsa and chiles in 3 1/2 to 4 quart slow cooker.
    • Cover and cook on low heat setting 6 to 8 hour or until pork is tender.
    • Stir in beans.
    • Cover and cook about 5 minutes or until hot.
    • Sprinkle with cheese if desired.
