    Default Kerryn's Baked Cauliflower

    Order nail wraps from a Jamberry Independent Consultant
    Description: Simply seasoned the flavour of the cauliflower is enhanced but not overpowered.

    Serving Size: Variable

    Time: Less than 30min

    Preparation: Heat oven to 180.C/350.F.
    Prepare baking pan by lightly oiling base.
    (Harvest &ampPrepare cauliflower by cutting into similar sized florets.
    Crush garlic and mix with lemon & oil

    Difficulty: Simple

    Ingredients:
    • Enough Cauliflower to serve diners.
    • 2-3 tbs Extra Virgin Olive Oil
    • 1-2 Tbs lemon juice
    • 1-2 cloves of garlic
    • Salt & Pepper
    • Finely grated parmesan (optional)
    Steps:
    • Place cauliflower florets in baking dish.
    • Drizzle with garlic/oil solution.
    • Season to taste with cracked black pepper and salt.
    • Bake for 10-20 minutes (depends on size of florets) until cooked to your liking.
    • Serve hot as is, or sprinkled with good grated parmesan.

    Variations:

    I used an EVOO blended with cold presses lemon oil, because I didn't have any fresh lemons at the time.

    The kids loved it (even Timothy!), I couldn't get enough. *Must plant more Cauliflowers.*


    If you like a bit more texture you could scatter coarse bread crumbs (or torn bread) over the cauliflower before drizzling with the oil/garlic, though you may want more oil/garlic mixture.

    The lemon could be omitted also if you wished.

    I made this tonight, and it was a huge hit with everyone. Even the kids gobbled it up! I thought it would be crunchy from the oven, but it was just soft enough
    We had hamburgers, and I wanted to offer something healthier than french fries. Leah would put down her burger (really a sandwich) every time I placed another batch of cauliflower on her tray. She didn't have 2nds or 3rds, but 4ths!!!!

    I have to admit, I doubled the garlic . (and I *did* use fresh parm )

    We do something similar w/o the lemon. I have to try that now. We also mix broccoli and cauli with good results

    This is just like my broccoli recipe. So delicious. The lemon really makes the dish. I also zest my lemon over it.
