    Default Kerryn's Smokey Baked Beans

    Order nail wraps from a Jamberry Independent Consultant
    Description: Wholesome, Simple and Tasty, something rustic and flaverful to warm you on a winter's day.

    Serving Size: 2 adults 2 small children as a main.

    Time: 30+

    Preparation: Finely dice onion.
    Slice bacon into small dice.
    Rinse & drain beans.

    Difficulty: Easy

    Ingredients:
    • 1 large onion
    • 4 rashers of good smoked bacon
    • 1 can of diced or crushed tomatoes
    • 1 can of cannelini beans (or equivilent of dried beans (soaked)
    Steps:
    • Heat saucepan.
    • Add bacon to pan with onions. Saute until onion is translucent and bacon picking up some colour.
    • Add beans and tomatoes and bring up to simmer.
    • Simmer for 20 minutes or until beans are to your liking.
    • Serve on toast for an easy weekend meal or as a side dish.

    This dish can also "bake" in the oven if you don't want to hang about stirring or if you want the flavours to fully develop. When I oven bake I use a stove top to oven casserole dish, and put in the oven at step 3. In the oven you can bake for 40 minutes to an hour.

    Variations: Delicious served with a sprinkling of fresh parsley, or a freshly poached egg (runny yolk) or both. I like it on toasted sourdough with the poached egg. The bread doesn't get too soggy but also soaks up the tomato gravy.

    I prefer cannelini beans but you could use navy beans, pinto beans, flagelot - any pulse really except lentils.

    This recipe would be great for a winters pot luck or brunch and is very easily multiplied.
