Description: Crispy toasted slices of bread, topped with red pepper pesto and shrimp.

Time: 30 minutes

Preparation: preheat oven to 350 degrees
thaw frozen shrimp under cold water or in a covered bowl in fridge
slice baguette

Difficulty: EASY

  • Baguette, sliced thin
  • Prepared red pepper pesto (see recipe in salads and sides)
  • Quick frozen shrimp
  • Olive Oil
  • Garlic cloves
  • Bring water to boil in sauce pan.
  • Add 1tsp salt.
  • Add thawed shrimp to boiling water. Do not overcook - shrimp will take less than 5 minutes. Remove from water when they are pink and just beginning to curl.
  • Arrange baguette slices on baking sheet.
  • Brush baguette slices lightly with olive oil.
  • Bake until slightly browned and crispy.
  • Cut one side of garlic clove and rub on baguette slices.
  • salt and pepper to taste.
  • Spread with red pepper pesto.
  • Top with one shrimp.
  • Arrange on plate, serve warm or room temp.
