    Default Oatmeal Breakfast Bars

    Order nail wraps from a Jamberry Independent Consultant
    Description: Kind of a homemade granola bar -- so yummy!

    Serving Size: 12

    Time: 10 minutes active; 1 hour cooking

    Preparation: Preheat oven to 250 degrees.

    Butter or grease a baking pan. A 13x9 pan will give you bars about 1/2" thick; a larger jelly roll pan will give you thinner, crisper bars.

    Warm the condensed milk in a pan.

    Mix the dry ingredients together in a large bowl. When the milk is warmed, stir it in. It will be sticky!

    Spread the mix in your pan. Because it's lumpy and sticky, and you'll need to do some mashing to get it all spread out. A rubber spatula works well.

    Bake -- for 1 hour if it's a 13x9, but for less if you've got a larger jelly roll pan. Let cool in the pan for 15 minutes before slicing. If it's tricky, a pizza cutter works well.

    Difficulty: Easy

    Ingredients:
    • 2.5 cups oats
    • 14 oz. condensed milk
    • 1 cup peanuts
    • 1 cup dried cranberries ("craisins&quot
    • 1 cup mixed seeds (see notes below)

    • Ingredient notes:
    • The original recipe also called for 1 cup of shredded coconut, but I can't stand coconut, so I left that out. Coconut lovers can add it.
    • For peanuts, I use shelled and skinned roasted, unsalted nuts. I think this recipe could work well with another nut too -- almond slivers, or chopped walnuts?
    • I've also made it with dried blueberries (TJoes) instead of dried cranberries.
    • For the one cup of mixed seeds, I've done about 1/2 cup roasted unsalted sunflower seeds, 1/3 cup roasted flax seeds, and top it off with a couple TBS of sesame seeds. Unsalted pumpkin seeds would probably also be a nice addition. Can definitely adjust this per your taste and pantry. The flaxseeds give them a great nutritional boost.

    Yummy!!! Rob makes something very similar except he uses apricots.
