    Default Buffalo Chicken Soup

    Description: This is a thick, hearty soup that has many variations and is cooked in a slow cooker. If you like hot wings and cream soups, you'll love this! Can be made for mild or spicy taste. Use reduced fat soups/cheeses to make it a bit healthier. Use store bought rotisserie chicken for convenience.

    Serving Size: Serves 4-6

    Time: Prep: 20 minutes Cook: 1 hour

    Preparation: Cook chicken breasts in slow cooker while preparing other ingredients, or shred an entire store bought rotisserie chicken.
    Dice onions and celery - saute in pan with half stick butter till tender.

    Difficulty: EASY

    Ingredients:
    • 3 cups shredded chicken
    • 1 can cream of chicken soup
    • 1.5 cups milk
    • 1/3 cup hot sauce (more to taste)
    • 1 stick butter, halved
    • 1 small diced onion
    • 2 stalks celery
    • celery salt
    • garlic salt
    • 1.5 cups shredded cheddar jack (subs. blue cheese/parm/mozz) cheese
    • 4 oz cream cheese * optional (subs. sour cream)
    Steps:
    • Cook chicken breasts in slow cooker while preparing other ingredients, or use a store bought rotisserie chicken.
    • Dice onion and celery. Sauté in pan with half stick butter until tender.
    • Add to slow cooker: soup, milk, shredded chicken, onion, celery, hot sauce, half stick butter, salts.
    • Cook on low for 1 hour.
    • Add cheese. (If using cream cheese, use an immersion blender to mix well)
    • Serve with tortilla chips, garnish with celery sticks, top with cheese and drizzle with hot sauce
    • Note: I used cream cheese in my recipe - but when making this soup next time, I will omit the cream cheese as I'm not fond of the "tang". Use an extra can of cream of chicken soup to thicken instead. I used three large chicken breasts that I cooked in the slow cooker and shredded myself. The result was very hearty, lots of chicken.
