Description: Slow cooked chicken, braised in red wine with bacon and dried cranberries. Perfect served with creamy mash on a winters night. Good enough for a special meal.

Serving Size: 6-8

Time: 15 min prep, 6 hours cooking tim

Preparation: peel and chop onion.
crush peel and chop garlic.
trim any visible fat from chicken and discard.
Halve chicken thighs (I would not halve if serving for dinner party).
Derind bacon and chop.
Optional step: soften onion, garlic and bacon in a little olive oil and fry off gently then add chicken to pick up a little colour.

  • 1 onion
  • 2 cloves of garlic
  • 8 skinned & boned chicken thighs
  • 3 rashers of bacon
  • 170gm packed of dried cranberries
  • 1 cup red wine
  • 1 tsp chicken stock powder
  • 1 bay leaf
  • 3tbs cornflour
  • 3 tbs water
  • Place onion, garlic, bacon, chicken, stock powder, cranberries and bay leaf in your crockpot and pour wine over mixture.
  • Cover and cook on LOW for 6-8 hours stiring halfway if possible.
  • 30 minutes before end of cooking mix conflour and water together and mix into the cooked chicken mix to thicken sauce (as necessary) cover and turn to HIGH for 30 minutes.
  • Season with salt/pepper.
  • Serve.
