Preparation: Preheat oven to 350 degrees.

  • 5 large eggs
  • 3/4 cup milk
  • Butter
  • Nutmeg
  • Salt
  • Pepper
  • 1 Pillsbury frozen 'deep-dish' pie crust
  • 1 cup shredded mozzarella cheese
  • 1 cup cooked spinach
  • 1/2 cup fresh mushrooms (sliced)
  • Beat eggs in a large mixing bowl.
  • Add milk and mix well.
  • Cook mushrooms with a pat of butter until tender. Salt and pepper mushrooms to taste as they are cooking.
  • In frozen pie crust layer as follows: Mushrooms, Spinach (sprinkle spinach with nutmeg to taste), Mozzarella
  • Pour egg mixture gently into frozen pie crust.
  • Place quiche on cookie sheet and bake on the middle oven rack for 45-50 minutes, or until top is browned and a knife inserted in center comes out clean.
