    Default The Breakfast Cookie

    Order nail wraps from a Jamberry Independent Consultant
    This is one of my new favorite obsessions! I am an oatmeal lover and love to find new ways to make oatmeal. This ROCKS.

    1/2 c rolled oats
    1 Tbsp ground flax seed
    1 Tbsp sliced almonds
    1/2 mashed banana
    1 Tbsp almond butter (or any nut butter really)
    splash of milk (1 2 Tbps? I use unsweetened vanilla hemp milk or almond milk, but any milk would do)

    The night before, put all ingredients in a bowl and stir. Add more milk if necessary. It should be a *little* soupy but not too much. Once well combined, scoop oats onto a large plate and flatten with a fork. Cover with wax paper or a paper towel and put in the fridge

    You can mix and match (or leave out completely) nuts and flax, etc, but the banana, milk and nut butter are necessary.... the milk soaks up the oats and makes them soft, the banana makes it sweet and the nut butter holds it together.

    In the morning, top with fruit, yogurt or eat plain! I love, love, love this and had to share.

    That would be a double thumbs up from Ethan and Cecily, and a huge grin from me since even Ethan (the world's slowest breakfast eater!) inhaled his (enormous) breakfast cookie this morning!!!

    I modified the recipe slightly since we were out of both sliced almonds and almond butter - for 2 big cookies, I used a cup of oatmeal, wheat germ, ground flax seed, an entire banana, a heaping tablespoon of soynut butter (next time it'll be almond butter), and some soymilk and a splash of OJ. I also added in a bit of cinnamon and made smiley faces with raisins and peanuts on top. The only objection was that there were no sprinkles on the "cookies" so I gave in and sprinkled a pinch of colored jimmies on the top of each . . . upon which the kids literally scarfed up their huge, plate-size portions!

    Next time I think I'll let the kids help me mix up the "batter" and smoosh it out. What a great idea - thanks!

    CMT, oh YAY! I'm so glad they liked it. Cool on your changes, I like the cinnamon idea. That's the best part about them, they are very versatile and you can use what you've got in your fridge or cupboards. I've got another variation where I use unsweetened cocoa powder and unsweetened chocolate almond milk. Talk about getting your chocolate fix. And the banana sweetens it up perfectly.

    That looks so yummy - and will be a huge hit in our house!! We go through a big thing of oatmeal every week it seems!
