    Default Rosemary Ranch Chicken Kabobs

    Order nail wraps from a Jamberry Independent Consultant
    Serving Size: 6

    Time: 50 min.

    Difficulty: Easy

    Ingredients:
    • 1/2 cup olive oil
    • 1/2 cup ranch dressing
    • 3 tablespoons Worcestershire sauce
    • 1 tablespoon minced fresh rosemary
    • 2 teaspoons salt
    • 1 teaspoon lemon juice
    • 1 teaspoon white vinegar
    • 1/4 teaspoon ground black pepper
    • 1 tablespoon white sugar
    • 5 boneless, skinless chicken breast halves - cut into 1 inch cubes
    Steps:
    • In a medium bowl combine all ingredients other than chicken.
    • Let stand 5 min.
    • Place chicken in the bowl, and stir to coat with the marinade.
    • Cover and refrigerate for 30 minutes.
    • Preheat the grill for medium-high heat. Thread chicken onto skewers and discard marinade.
    • Lightly oil the grill grate. Grill skewers for 8-12 min or until chicken is no longer pink in the center and juices run clear.

    Amanda! My kids adore this. Hannah requests it whenever I ask her what she wants for dinner. I've often done it with tenderloins and just browned them in a pan instead of skewering and grilling. Never a leftover!

    Had this tonight & it was a huge hit. We just marinated whole boneless, skinless chicken breasts for about 8 hours and then grilled. It was wonderful!!

    Jess, I just spray a skillet, or put a bit of coconut oil on it (you could use olive oil or whatever, too) and add the chicken (discard the marinade!). Turn the pieces every so often to cook through. I've done this with cubed chicken, or tenderloins.

    I let it marinade in a baggie for awhile (put some of the sauce aside - it's good for dipping, or just cooking it in).

    Oh, and you can do it without the sugar, too.

    My kids, who don't like anything eat it up!

    Jess you can do it without the grill. We planned to grill ours, but it ended up raining and I just put them in the oven to bake and they turned out great! I did them in strips and not on skewers and I didn't have ranch so I used creamy cucumber dressing and they were fabulous!

    Has anyone made this with dried rosemary? I've been wanting to try it forever, and have everything but the fresh rosemary. I'm not even certain I could find fresh herbs around here, all I've ever seen is cilantro!
