    Default Banana Cinnamon Crumble Muffins

    Order nail wraps from a Jamberry Independent Consultant
    1-1/2 cups all purpose flour
    1 tsp baking soda
    1 tsp baking powder
    3/4 tsp ground cinnamon
    1/2 tsp ground nutmeg
    1/2 tsp salt
    3 bananas, mashed
    1/2 cup white sugar
    1/4 cup packed brown sugar
    1 egg
    1 tsp vanilla extract
    1/3 cup melted butter (or oil, if going dairy-free)
    ****For topping***
    1/4 cup packed brown sugar
    2 TBS all purpose flour
    1/4 tsp ground cinnamon
    1 TBS butter (or oil, if going dairy free)

    Preheat oven to 375 degrees. Line or grease a 12-cup muffin pan.

    In a large bowl, mix together 1-1/2 cups flour, baking soda, baking powder, cinnamon, nutmeg and salt. In another bowl, beat together bananas, sugar, egg, vanilla and melted butter (or oil). Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

    In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter (or oil) until mixture resembles coarse cornmeal. Sprinkle topping over muffins before baking.

    Bake 18 - 20 minutes or until toothpick inserted in a muffin comes out clean.

    **Note**I used 1 cup AP flour and 1/2 cup whole wheat flour. I also used oil instead of butter (used 1/3 cup in the muffins and 1 TBS in the topping) and these came out DELICIOUS. This recipe came from AllRecipes originally and I made a few adjustments

    those look delicious! we're going to have to try them. maybe as mini-muffins since Max likes to stuff his face with as many muffins as he can...

    Ok so what if you only have 2 bananas will the receipe still work. Mine are like super super brown But I only have 2 bananas right now

    I think so, Joanne. I used three, but when I've been short before with regular banana bread, it's turned out fine, maybe just a little bit drier than usual.
