Smoky Black Bean and Chipotle Turkey Chili (LowFat)
Description: A thick, saucy, smoky chili that's the best with cheddar cheese and crusty bread. 
Preparation: Chop onion. Chop or puree chipotles (should be about 1.5 tablespoons - I puree the can and freeze in portions). Soak/cook dried beans if using; if not, open cans. 
Difficulty: medium
Ingredients: - pound ground turkey or other meat
- onion
- few cloves garlic
- olive oil
- large can tomatoes (I like chunky crushed type)
- can tomato sauce
- 2 cans EACH black and pinto beans OR 1.5 pounds dried beans
- 1-2 chipotles in adobo OR chipotle powder to taste
- salt
- pepper
- Liquid Smoke
Steps: - Brown lean ground turkey (or other meat) in olive oil. (Can be made veg but I prefer with meat.) Brown chopped onion and a couple cloves pressed garlic. Add can of tomatoes, tomato sauce, prepared beans, salt, pepper, dash Liquid Smoke if using, and chipotle.
- Simmer, simmer, simmer - the longer the better. Adjust seasonings.
