    Default Loaded Baked Potato Soup

    Order nail wraps from a Jamberry Independent Consultant
    Description: a creamy potato soup!

    Difficulty: Easy

    Ingredients:
    • 12 slices bacon, cooked crisp and crumbled
    • 2/3 cup margarine
    • 2/3 cup all-purpose flour
    • 7 cups milk
    • 4 large baked potatoes, cubed
    • 4 green onions, chopped
    • 1 1/4 cups shredded Cheddar cheese
    • 1 cup sour cream
    • 1 teaspoon salt
    • 1 teaspoon ground black pepper
    Steps:
    • In a stock pot or Dutch oven, melt the margarine over medium heat. Whisk in flour until smooth.
    • Gradually stir in milk, whisking constantly until thickened. Stir in potatoes and onions. Bring to a boil, stirring frequently. Reduce heat, and simmer 10 minutes.
    • Mix in bacon, cheese, sour cream, salt, and pepper. Continue cooking, stirring frequently, until cheese is melted.

    This makes a LOT, so when I make it just for Matt, DS, and myself, I halve the recipe and we still have left-overs.

    I usually use turkey bacon, and the bacon can be omitted and the soup is still super good and vegetarian.

    I never peel the pototoes, and use a big serving fork to mash them up in the soup when they're done cooking - just depending on how lumpy you like your soup, you could even use an immersion blender.

    Yummy! I made this tonight, and it was really good. I tried to be good and use light sour cream, turkey bacon, and skim milk. It was still delicious, and DH liked it too.

    I use skim milk and turkey bacon, too! Except when I use light sour cream it doesn't melt well and gets lumpy in the soup.
