    Default Chase's Chicken Pot Pie

    Description: A chicken pot pie w/an herb biscuit top

    Difficulty: Easy

    Ingredients:
    • 2 skinless, boneless chicken breast halves - cubed
    • 1 cup sliced fresh carrots (about 5 or 6 carrots)
    • 1 cup fresh green beans
    • 1/3 cup butter
    • 1/3 cup chopped onion
    • 3 cloves garlic, chopped
    • 1/3 cup all-purpose flour
    • 1 teaspoon salt
    • 1 teaspoon oregano, dry
    • 1 teaspoon basil, dry
    • 1 teaspoon black pepper
    • 3 medium golden potatos, cubed (or 5 red potatos)
    • 2 cups chicken broth
    • 1 cup milk
    • 1 cup all-purpose flour
    • 2 teaspoons baking powder
    • 1-1/2 teaspoons sugar
    • 1/4 teaspoon salt
    • 2 tablespoons butter or margarine
    • 1/2 cup milk
    • 1/2 teaspoon basil
    • 1/2 teaspoon oregano
    Steps:
    • Preheat oven to 415 degrees F
    • In a saucepan, combine chicken, carrots, beans, and potatoes. Add enough to fill just over 3/4 of the pot. Add broth to cover and boil for 15 minutes. Remove from heat, drain and set aside.
    • In stainless saute pan over medium heat, cook onions in butter until soft and translucent. Add garlic and cook until golden (do not burn). Stir in flour, salt, pepper, oregano, and basil. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
    • Place the chicken mixture in casserole dish. Pour sauce over. Cover with biscuit topping.
    • Bake in the preheated oven for 30 to 35 minutes,
    • or until top is golden brown and filling is bubbly. Cool for 10 minutes before serving.
    • Biscuit Topping
    • In a medium bowl, combine flour, baking powder, sugar, basil, oregano and salt; mix well. Cut in butter until mixture resembles coarse crumbs. Stir in milk just until moistened. Turn out onto a lightly floured surface; knead gently 8 to 10 times. Roll to 3/4-in. thickness large enough to cover most of the casserole dish.
