    Default Super awesome granola

    Order nail wraps from a Jamberry Independent Consultant
    Description: More economical and healthier than buying granola at the store. I let the kids make this batch. They had so much fun. We have been mixing ours in with natural yogurt and fruit, over ice cream, or just as cereal with milk. You can add dried fruit as well.


    Serving Size: 11.5 cups

    Preparation: Line two jelly roll pans with foil. Spray with canola oil cooking spray.
    Preheat oven to 300 degrees.

    Difficulty: Easy

    Ingredients:
    • 6 cups rolled oats (not quick or instant oats)
    • 2 cups mixed chopped nuts and seeds: almonds, pecans, cashews, sunflower seeds, sesame seeds etc
    • 1/2 cup Wheat germ
    • 1/2 cup Ground flax seed
    • 1/4 cup canola oil
    • 1 tsp cinnamon
    • 1/8 tsp salt
    • 1/4 tsp vanilla extract not imitation
    • 1/2 to 1 cup brown sugar
    • 1/2 cup honey or pure maple syrup
    • 1 cup dried shredded coconut (can substitute with 1/4 cup coconut oil)
    • optional: Mix in 1 cup nut butter
    Steps:
    • In a bowl, combine oats, nuts and seeds, cinnamon, salt, sugar (except coconut).
    • Mix thoroughly.
    • Add honey/syrup, vanilla and canola oil.
    • Coat evenly.
    • Turn mixture onto jelly roll pan and spread out evenly.
    • Bake for 30 minutes or longer, stirring occasionally, being careful to not over-brown the mixture.
    • Add coconut halfway through cooking time and mix in (it will burn otherwise).
    • Cool, stirring occassionally.
    • Transfer to a sealed container and store in refrigerator where it will keep indefinitely.
    • * I wanted a lower fat version - you can add more canola oil and sugar for a more traditional granola.

    Wow!! that sounds fantastic!!! If you add in the nut butter, would you omit anything?

    You could probably use less oil and sugar if you add a nut butter, but since I haven't tried it, I'm not sure. I love how customizable it is!
