Description: Barley side dish

Serving Size: Serves 6-8

Time: About 2 hours with baking time

Preparation: Only prep is to chop veggies.

Difficulty: Easy

  • 2 celery ribs, chopped
  • 2 medium carrots, finely chopped
  • 7 green onions, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons butter or stick margarine
  • 1 1/2 cups uncooked medium pearl barley
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 5 1/4 cups chicken broth, divided
  • In a large ovenproof skillet, saute the celery, carrots, onions and garlic in butter until tender. Stir in the barley, salt and pepper. Stir in 2-3/4 cups broth. Cover and bake at 350 degrees F for 45 minutes.
  • Stir in 2 cups broth. Bake, uncovered, 30 minutes. Stir in half cup broth and bake, uncovered, 15 minutes longer or until liquid is absorbed and barley is tender.
