Preparation: Set salted water to boil while you slice the potatoes thin. Chop onions.

Difficulty: Easy

  • 5 or 6 small baby red potatoes
  • Olive oil
  • ½ cup onion chopped
  • 1 TBS garlic salt
  • salt
  • pepper
  • 1 can cooked chicken breast or turkey breast, drained*
  • 1 cup sweet corn
  • 1 can cream of mushroom soup
  • Optional: ½ cup shredded cheddar cheese
  • * use rotisserie chicken or fresh or frozen chicken breasts instead, whatever is on hand
  • Slice potatoes in thin quartered slices.
  • Bring salted water to a boil, boil potatoes until soft.
  • Drain.
  • Heat olive oil in a pan.
  • Cook onions until tender.
  • Add turkey or chicken to the pan, season with garlic salt and pepper.
  • Add corn, potatoes and can of soup, stir well and heat until hot. Serve with cheese on top with a green veggie on the side.
